The Lava Flow Drink The flavors of this lava flow drink are amazing. Pineapple, coconut and strawberry combine to create a stunning and delicious cold drink.

This is the second beautiful and refreshing drink I’m sharing this week, in case you need drink inspiration for the upcoming 4th of July holiday—or anytime, for that matter.

The taste of this drink is a match made in heaven, if you ask me. Pineapple, coconut and strawberry with a soft and creamy undertone come together to create an incredibly tasty, warm and wonderful drink.

I made this drink a few months ago while it was very cold in our exceptionally hot spring and my kids loved it (don’t worry, my version is non-alcoholic!).

I took them out to slurp wild abandon while I stayed in the kitchen and finished all the pitchers… as well as wild abandon.

Don’t judge me. I was about 11 months pregnant at the time.

Although it requires three coats of clarity (and requires a bit of washing afterwards), it’s worth it. Absolutely delicious, this lava flow drink!

The Lava Flow Drink

Yield: 8 -10 servings

Prep time: 10 minutes

Total time: 10 minutes

Ingredients

  • 3½ dl pineapple juice
  • 2 cans (15 ounces each) of creamed coconut, (like the Coco Lopez brand)
  • 1 cup half and half, low fat or regular
  • 24 ounces frozen strawberries in syrup, slightly defrosted until soft in texture
    Ice
  • Fresh pineapple for garnish, if desired

Instructions

  1. Puree the slightly thawed strawberries in a blender with 1/2 cup of water. The mixture should be syrupy and thick. Transfer to a liquid measure, bowl or jug ​​and set aside.
  2. In a jug, whisk together pineapple juice, cream of coconut and half-and-half.
  3. Fill a blender halfway with ice (washed after pureeing the strawberries). Pour in the coconut/pineapple mixture until it is level with the ice cream. Blend until smooth (add more coconut/pineapple mixture if too thick to blend easily).
  4. Pour about an inch of the strawberry syrup mixture into a cup. Pour the ice cold coconut/pineapple mixture into the center of the strawberry mixture in the cup until the cup is full. If desired, you can gently swirl the mixture with a straw.
  5. Garnish with fresh pineapple, if desired, and serve immediately.

Note

Cream of Coconut: I always find coconut cream in the mixed drinks aisles (coconut cream is not alcohol).
Keep chilled: Chill each component after mixing to keep chilled before assembling the drinks, but don’t go too far as the ice crystals will melt in a few steps.
