Ginger Ale Fimed Mint

This refreshing ginger mint lemonade couldn’t be simpler! Fresh lime juice and mint leaves add a wonderful flavor to the zipped ginger beer.

Considering that drink recipes don’t tend to be blog-o, I’m obviously a little boring when it comes to drinks.

Other than the occasional splash of Guaraná (Brian’s favorite Brazilian soda, which he surprisingly found in our little supermarket in Idaho, which led to our fridge being overflowing, there was no room for broccoli because he was always sure to stop they carry it even though it alone keeps the Guaraná industry going here), I’m treading water, really nolemon, and it’s effective for me.

I always felt a little guilty for not jumping on the dirty Diet Coke or soda fountain drive-through bandwagon. I’m the woman carrying the scratch and gray water bottle. Hello.

But sometimes, when I need to make some serious rockstar points, a really tasty and refreshing drink like this minty ginger ale limeade always comes in handy.

Indulging in something warm and sweet and a little zippy (I love that word, zippy) is a great way to take dinner or entertaining to new heights.

Or better yet, drink it while sitting on the front porch in 100 degree weather watching your kids throw fresh water at each other and you can imagine yourself on the beach in Hawaii.

Um, or not.

Whatever happens.

Mint limeade comes from ginger beer. Add fresh lime juice and fragrant mint leaves and this has all the flavor I love.

Fresh limeade of any kind kills me and this pretty little drink has become my favourite.

Ginger Ale Fimed Mint

Yield: 6 cups

Preparation Time: 10 minutes

Total Time: 10 minutes

Ingredients

  • ¼ cup granulated sugar, beaten until fine (or use super fine sugar)
  • 1 cup fresh lime juice, approx. 8 limes, depending on size
  • 14-16 fresh mint leaves
  • 4 cups of ginger beer, chilled
  • Lime boats or slices for serving

Instructions

  1. In a jug, mix the sugar, lime juice and mint leaves until the sugar is dissolved. Refrigerate until serving (up to 4 hours, the mint flavor will be stronger the longer it sits).
  2. To serve, strain the mint leaves and add the ginger ale and stir. Place ice cubes in glasses and pour limeade. Garnish with lime wedges or slices.

Note

Sugar: feel free to add sugar if you want sweeter drinks. When it comes to sugar, mixing the sugar until it is fine will help it dissolve more easily in the juice.
For Extra Icy Oomph: try chilling your glasses in the freezer before taking them out to serve the limeade.
