French Chocolate Granola

Yield: 20 servings (about 5 cups) Preparation time: 15 minutes Cooking time: 20 minutes Total time: 35 minutes

Ingredients

  • 3 cups rolled oats
  • 1/2 cup chopped raw almonds
  • 1/2 cup unsweetened shredded coconut
  • 2 tablespoons granulated sugar
  • A pinch of salt
  • 6 tablespoons honey
  • 2 tablespoons vegetable oil
  • 1/2 cup or more finely chopped dark chocolate

Instructions

  1. Preheat oven to 300 degrees F.
  2. In a large bowl, combine the oats, almonds, coconut, sugar, and salt. Stir well to combine.
  3. In a small saucepan, heat the honey and oil over low heat, whisking occasionally (be careful! the oil will splatter) until the honey has dissolved. Pour over the dry ingredients and stir until well combined.
  4. Spread the mixture evenly on a rimmed baking sheet. Bake for 20 minutes or until golden brown. Set a timer to go off halfway through baking so you can stir the granola well; this helps it cook evenly. When ready, remove the pan from the oven, give it a good stir (this will prevent it from cooling into a hard, solid layer) and let it cool completely.
  5. When cool, transfer the granola to a large bowl, storage container, or resealable plastic bag. Add the chocolate and stir (or shake, if using a jar or bag) until combined.
  6. Store in an airtight container.
