Baked Oatmeal

Baked oatmeal is similar to an oatmeal “cake,” but it’s still healthy, moist, and versatile. Your whole family will love it!

Thanks to my wonderful friend Darcy (who took all my cooking conversations with a sense of humor and inspired me with this recipe and otherworldly homemade pasta while living in Utah), it’s now a staple in our house and forced me to admit that I’ll never be able to eat plain oatmeal again.

This is the reason why there is a “pastel” in the oven, it is saludable (so, consider that the large cantidades of azúcar are more saludable), it is more and more saludable.

Baked Oats

Makes: 8 servings (9 x 13-inch pan)

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Ingredients

  • 6 cups (600 g) instant or traditional oats
  • ½ cup (318 g) brown sugar
  • ½ cup oil
  • ½ cup (113 g) apple juice
  • 2 cups milk
  • 4 large eggs, beaten
  • 1 teaspoon vanilla extract
  • 1 tablespoon baking powder
  • 2 teaspoons salt

Instructions

  1. Preheat oven to 350 degrees. Combine all ingredients and pour into a greased 9×13-inch baking pan.
  2. Bake for 20 to 25 minutes, until a toothpick inserted in the center comes out clean. Serve with milk and/or fresh fruit.

Half the recipe: The recipe can be easily halved and baked in an 8×8-inch pan.
(Update 10/2010): Check the comments to see how others have varied this oatmeal with applesauce amounts and other creative ways. For me, I modified the recipe to use less brown sugar than the original and replaced half the oil with applesauce.
