Sweet Corn Smoothies

These candy corn shakes are made from vanilla ice cream colored to resemble the sugary treats that are devoured during the Halloween season.

Okay, admittedly, the cute little candy corns aren’t exactly “spooky” when it comes to Spooky Food Week, but they fit the Halloween theme… so… here they are.

Another idea that’s simple in concept, vanilla ice cream is lightly colored and layered in a clear glass to resemble the sugary, addictive treats that are so readily devoured during the fall and Halloween season.

I mean, it’s just vanilla ice cream after all, but you’d think I was a living genius the way my kids, wide-eyed and open-mouthed, looked at the shaken candy corn, then looked at me, looked at the shaken candy corn, then looked at me. Oh really. Genius.

I accept that. And don’t you dare send my kids a note with the truth about their mom, that’s not cool at all.

On that note, I leave you with the promise that tomorrow I have two great recipes to share that will taste delicious and will impress the kids enough to keep things lively.

Sweet Corn Smoothies

Yield: 4-6 shakes

Prep time: 20 minutes

Total time: 20 minutes

Ingredients

  • 1 quart vanilla ice cream
  • Orange and yellow food coloring
  • Clear plastic or glass cups
  • Lightly sweetened whipped cream
  • Sugar sprinkles, if desired

Instructions

  1. Remove the ice cream from the refrigerator and let it set for 20 to 30 minutes. Pour 1/3 of the ice cream into a medium bowl. Use orange food coloring, gel or liquid, to tint the ice cream orange if desired. Stir well to mix and color.
  2. In another medium bowl, pour the other 1/3 of the ice cream and tint it yellow if desired. Stir well to mix and color.
  3. Add the remaining vanilla ice cream and process until smooth and creamy.
  4. Pour the yellow ice cream into the bottom of a plastic cup until it is 1/3 full. You may need to clean the glass if there are streaks on the top of the glass from spooning. Smooth them out as much as possible, trying to get rid of any air bubbles on the sides.
  5. Pour the orange ice cream over the yellow until the cup is about 2/3 full. Again, clean the inside of the glass, if necessary, and smooth the top of the orange ice cream. Cover with vanilla ice cream to within 1/4 inch of the top of the glass. Smooth the top. Top with whipped cream and sprinkles, if desired. Freeze until ready to serve.
