What are your plans for Mother’s Day? hmm? If you’re a mom, do you cook for yourself or do you have little Mother’s Day elves around your house to cook for you?

We’ve lived away from family for so long that the idea of ​​spending Mother’s Day with our real mothers (who we love like crazy) wasn’t even on the radar.

My friends who split their time between Mother’s Day brunches and evening dinners and driving to see this mom and that mom and your mom and mine, well, I don’t know what that world is like. It sounds busy, stressful and wonderful all at the same time.

I don’t understand how people eat brunch on Mother’s Day. Do people do that? Really? Jeez, I should be clearer.

Mother’s Day is simple here. Brian, who wins every kind of award I know, takes over the kitchen for the day and lets me ask what food I want, and believe me, I don’t take it easy.

I think long and hard about what food I should breathe in for the Big Day. This year, I’m pretty sure it’s going to be this Beach Street Linguine (oh my delicious) coconut shrimp broth is one of my favorite dishes. Results! The stress of it all!

Seems like the safest thing to do is ask all three and see what happens, don’t you think?

While I’m not a big breakfast eater (usually a smoothie and a banana after working out), Mother’s Day is an exception.

Even though my internal alarm clock woke me up hours ago, the kids like to doodle around the kitchen, throwing breakfast together for me while I still pretend to be asleep in bed.

They walk in the room, lay down on plates of food and glasses of milk and juice (because I can’t agree on which to bring, so I grab both) and sit on my legs and make i enjoy everything . Bit.

It’s adorable, but I usually sneak some food under the lid when they’re not looking, because they bring enough to feed five moms.

While they haven’t taken breakfast requests in the past (I’ve been a little scared to bring breakfast for years, I’m not going to lie), this year, I’m sure my 9 year old will definitely an appearance with these Apple Cinnamon Waffles and her trusty dad.

We had them a few weeks ago (thanks, Bri, for the recipe!) and even my non-breakfast self has been dreaming of them ever since.

Talk about a perfect Mother’s Day breakfast or another indulgent breakfast. Maximum cinnamon flavor! Lightly Sweet Cinnamon Waffles are decorated with warm, sweet, cinnamon apples and a tangy cinnamon syrup.

I put this recipe under every Rugratin pillow. Hopefully they get the hint instead of thinking it’s a secretly coded message from the Tooth Fairy.

Apple Cinnamon Waffles with Cinnamon Syrup

Yield: 6 -8 servings

Prep Time: 25 minutes

Cooking Time: 15 minutes

Total Time: 40 minutes

Necessary materials

Cinnamon Syrup:

  • ½ cup (106 grams) granulated sugar
  • ½ cup (106 grams) refined brown sugar
  • 2 tablespoons all-purpose flour
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup of water

Cinnamon Apples:

  • 1 tablespoon of butter
  • 2-3 large sweet apples, peeled, cored and diced
  • ½ teaspoon ground cinnamon
  • 1 teaspoon brown sugar
  • A pinch of salt

Waffles:

  • 2 cups (284 grams) whole or white all-purpose flour
  • ¼ cup (53 grams) granulated sugar
  • ¼ cup (53 grams) brown sugar
  • 2 teaspoons ground cinnamon
  • 4 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 ¾ cup milk
  • ½ cup vegetable, canola, or coconut oil
  • 1 teaspoon vanilla extract
  • 2 egg whites

Instructions

  1. For the syrup, mix together the sugar, flour, and cinnamon in a small saucepan. Whisk in the water and vanilla. Bring the mixture to a low boil and simmer for 5-10 minutes until slightly thickened. Keep warm while making apples and waffles.
  2. For the cinnamon apples, melt the butter in a 12-inch nonstick pan. Add the apples, cinnamon, brown sugar and salt. Cook over medium heat, stirring frequently, until apples are tender, 5-7 minutes. Keep warm while making waffles.
  3. In a medium bowl, whisk together the flour, white sugar, brown sugar, cinnamon, baking powder and salt. Pour milk, vegetable oil and vanilla extract into flour mixture; Mix until blended. Do not over mix! The mixture should be slightly runny.
  4. In a medium glass or metal bowl, beat egg whites until soft peaks form. If you lift your beater or whisk straight up, the egg whites will form soft peaks rather than sharp peaks. Fold the beaten egg whites into the batter.
  5. Heat a waffle iron (spray with cooking spray if needed) and cook the waffles on the hot iron.
  6. Serve with cinnamon apples and cinnamon syrup.

Notes

For the Cinnamon Apples: Feel free to increase the cinnamon depending on how much cinnamon flavor you like.
Apples + Sugar: Also, if you’re using a tart apple like Granny Smith, you may want to adjust the sugar (ie: kick it up a notch).
